Salmon Pasta Recipe

Ingredients

  • 250g Fresh Salmon
  • 250 ml Vegetable Broth
  • 250 g Heavy Cream
  • 1 Lemon
  • Bunch of Dill
  • Bunch of Scallions
  • Oregano
  • Thyme
  • Nutmeg
  • Black Pepper
  • Olive Oil
  • Soy Sauce
  • Salt

Steps

  1. Grind oregano, thyme and a bit of salt to a powder in a mortar and pestle, then add 2 tbsp olive oil.
  2. Cut salmon into 2-3cm chunks, coat with oil mixture and salt liberally.
  3. Sear salmon until browned.
  4. Chop scallions into thin slices and add to pan. Sauté until translucent.
  5. Add vegetable broth and a dash of soy sauce.
  6. Finely chop dill and add to pan. Cook for a few minutes.
  7. Add lemon zest and heavy cream. Bring to a boil.
  8. Season to taste with lemon juice, pepper and nutmeg. Done!

Goes well with tagliatelle or fettucine.
