Salmon Pasta Recipe
Ingredients
- 250g Fresh Salmon
- 250 ml Vegetable Broth
- 250 g Heavy Cream
- 1 Lemon
- Bunch of Dill
- Bunch of Scallions
- Oregano
- Thyme
- Nutmeg
- Black Pepper
- Olive Oil
- Soy Sauce
- Salt
Steps
- Grind oregano, thyme and a bit of salt to a powder in a mortar and pestle, then add 2 tbsp olive oil.
- Cut salmon into 2-3cm chunks, coat with oil mixture and salt liberally.
- Sear salmon until browned.
- Chop scallions into thin slices and add to pan. Sauté until translucent.
- Add vegetable broth and a dash of soy sauce.
- Finely chop dill and add to pan. Cook for a few minutes.
- Add lemon zest and heavy cream. Bring to a boil.
- Season to taste with lemon juice, pepper and nutmeg. Done!
Goes well with tagliatelle or fettucine.
